Avocado Scrambled Eggs

Ingredients

 

1tbs Gee for Frying

1 Slice of Bread

 

For the Scrambled Eggs

2 Eggs

2tbsp of Milk

A Few Slices of Red Onion

Small handful of Fresh Spinach

15g Feta Cheese

Salt & Black Pepper

 

For the Avocado Spread

1/2 Ripe Avocado

Squeeze of Fresh Lemon Juice

1/3 Garlic Clove

Black Pepper

 

How to make this delicious dish…

 

To make the avocado spread, remove the inner flesh from the skin and mash this in a bowl with a little squeeze of fresh lemon. If the avocado is still a little firm you can use a high speed blender to break it up a little easier, but be careful not to over-do it as you don’t want to end up with a sloppy paste! Next crush into the avocado 1/3 of a clove of garlic, mix together and season lightly with salt and pepper.

 

Now, coarsely slice up your piece of red onion, feta and spinach, and set aside. Then with a fork whisk together the eggs and milk in a cup or small bowl. Heat the ghee up in a small frying pan, firstly frying off the red onion with a small sprinkling of salt. After a minute add in the egg and milk, and set your bread on to toast. When your eggs are about 1 minute away from being fully cooked thrown in your feta cheese and spinach, and leave to wilt and melt slightly.

 

Meanwhile top your toast with avocado spread, and then top this again with your scrambled eggs and season with black pepper. Serve straight away to fully appreciate the flavours of the melted feta! Also goes beautifully with some freshly made lemon and ginger tea.
