Fancy a Treat...?

Sugar and spice and all things nice, that’s the key to the perfect baked treats. Right? A balance of earthy spices and sweet notes definitely pleases my pallet, but unlike the old nursery rhyme, not all sweetness has to come from the sugar.

 

By using a combination of naturally sweet spices, fruits and even a roots vegetable, you can add new a dimension of flavours to your bakes that simultaneously add nutritional value and reduce the amount of refined sugar needed in the recipe.

Summer is finally upon us, and I bet you’re diving outside every weekend to make the most of it! These power balls are the ideal snack for active days out walking or cycling, filled with essential fats, protein, vitamins and naturally occurring sugars to keep you on top form all day.

While this recipe may sound like a bizarre concept to those of you who don’t already indulge in ‘vegetable cakes’, don’t let the mention of courgette fool you into thinking this cake is any less of a tasty treat that your average one.

Okay, I might be breaking the rules a little bit here since technically these aren’t particularly healthy. However, we do all need a treat every now and again! I’ve also been asked for this recipe from a couple of people, so they must be rather yummy…

 

I’ve done a bit of successful experimenting with this recipe by using half wheat flour and half coconut flour. Being naturally low-carb and gluten-free, coconut flour is very healthy compared to your traditional flours. However, because of its very high fiber content, it is incredibly absorbent and can be difficult to bake with. Sadly using 100% coconut flour would almost certainly end in disaster, so stick to 50:50 for this recipe.
