‘The Medicinal Chef’ Dale Pinnock has been a real inspiration for me and my cooking. As a qualified nutritionist Dale approaches food and cooking in a rather unique way, focusing on the nutritional properties of his ingredients and combining them in such a way to help combat or alleviate the symptoms of common yet frustrating health conditions.
I regularly find myself flicking through two of his books “Eat Your Way to Better Health” and “Healthy Every Day” which both talk in depth about individual ingredients, vitamins and minerals; what foods are helpful for specific illnesses, as well as containing loads of fantastically delicious recipes.

An absolutely essential cookbook for anyone trying to avoid gluten, or trying to master the art of cooking with coconut flour. If you have tried cooking with coconut flour before, you’ll understand when I say the experience and end results can be frustrating and disappointing. It’s high fiber content and lack of gluten causes this flour to act unlike its wheat counterparts. Therefore, it’s not possible to simply substitute one flour for the other and expect the same tasty results. However, thankfully Bruce and Leslie Fife have done all of the hard work for us when it comes to experimenting with coconut flour. After what I can only imagine were many long days, repeatedly and carefully measuring and balancing the ingredients, Bruce and Leslie have engineered 150 gluten-free coconut flour recipes so you can achieve similar end results to those you would get with regular flour. Personally I’m completely addicted to their coconut flour pancakes, which are great for both savoury and sweet dishes!
