Honey Nut Power Balls

Summer is finally upon us, and I bet you’re diving outside every weekend to make the most of it! These power balls are the ideal snack for active days out walking or cycling, filled with essential fats, protein, vitamins and naturally occurring sugars to keep you on top form all day.

 

Ingredients

 

1/3 Cup of Chopped Dates

1/2 Cup of Walnuts

1/3 Cup of Pecans

1/3 Cup of Almonds

1/8 Cup of Pistachios

1/8 Cup of Peanuts

1/8 Cup of Golden Raisins

1/8 Cup of Coconut Flour

1 dsp Manuka Honey

1 dsp Agave Syrup

1 dsp Chia Seeds

1 tbsp Coconut Oil

1 tbsp Cacao Butter

1/3 Cup of Desiccated Coconut (to coat the balls in)

 

Method

 

In a bowl, place the chopped dates with about a tbsp of water, and set them aside for a few minutes. Coarsely chop up all of the nuts into a food processor using the small bowl (or chop them up with a knife). Drain the dates and add them to the nuts.

 

Next gently melt together the coconut oil and cacao butter in a heatproof bowl over a simmering pan of water. While the butter and oil are melting, add the manuka honey, agave syrup, golden raisins and chia seeds to the nuts and dates in the food processor. Pulse the food processor until all the ingredients are well mixed. Once melted, add the butter and oil to the mix and again pulse until fully mixed in.

 

At this point the mixture should be sticky and very malleable. Slowly add the coconut flour while continuing to blend the mixture as you do, until it begins to dry out enough to roll into little balls.

 

Next divide and roll the mixture into small balls, roll each ball in desiccated coconut, and place them in a container in the fridge for at least an hour to harden a little.

 

These should last for about a week if kept in your fridge!
