Wild Pigeon with Strawberry Sauce

 

Having recently been exposed to the wondrous combination of duck with fried strawberries, I couldn’t wait to do a bit of experimenting with these ingredients myself!

 

Then at the end of this week’s Ocado order, just as I was about to proceed to the online checkout, an offer flashed up…Wild Pigeon half price! Having never had pigeon before I almost dismissed the idea completely. In my mind, pigeons are simply those birds that coo annoyingly at my bedroom window, not a scrumptious piece of meat. However, I know others who disagree… so why not I thought, and the idea of strawberries popped into my head. While I realize pigeon isn’t duck, its dark tender meat is similar to duck and should compliment the same flavours.

 

In addition to this dish’s incredible mouthwatering flavours, the fact that one of the main ingredients is wild game makes it rather healthy. Unfortunately, we now live in a society that regularly eats meat from animals that have been factory farmed and fed hormones. It doesn’t take a genius to realize that this isn’t going to be the most nutritious food source. However, in contrast game is often sourced from the wild, where the animals have been running free and eating their natural and nutritious diets. It’s consequently leaner and has a higher content of both omega 3 fatty acids and omega 6 fatty acids.

 

Ingredients (Serves 2)

 

250g Wild Pigeon (or Duck)

100g British Strawberries

1 tsp Water

1 tsp Agave Syrup

½ tsp Balsamic Vinegar

Black Pepper

Salt

4 additional Strawberries

 

Method

 

Place the 100g of strawberries into a small pan and mash them to a pulp with a potato masher. Add the water and agave syrup, and turn the heat on medium-low beneath the pan and stir well. Allow the mixture to bubble gently then add the balsamic vinegar, a pinch of salt and a generous seasoning of black pepper.

 

Slice up the remaining 4 strawberries and generously season the Pigeon breast with black pepper and salt. Heat a small frying pan with a little olive oil over a medium-high heat. Once heated add the pigeon and fry for about 3 minutes on each side. When you flip the pigeon to cook the second side, also add in the sliced strawberries.

 

When your pigeon is cooked to the way you like it, pour the strawberry sauce onto a plate and position the pigeon and fried strawberries on top to serve… I hope you enjoy this one as much as I did!
