Simple Pea, Broccoli & Mint Soup

 

Ingredients

 

500g Frozen organic peas

200g Organic broccoli (chopped up)

100ml Organic Crème Fresh

1 Large white onion

1lt Vegetable stock

2dsp Dried mint leaves

2 Cloves of garlic

2 Bay leaves

Knob of Butter

Cracked black pepper

 

Method

 

Begin by chopping up the onion and crushing the cloves of garlic. Next melt the knob of butter in a large deep pan on a medium-high heat, once fully melted add the onion and garlic and fry until the onion becomes translucent.

 

While you are frying the onions, prepare the liter of vegetable stock and then add this to the fried onions. Pour in the peas and chopped broccoli, add the bay leaves and bring the liquid to the boil. Sprinkle on the dried mint leaves and a pinch of salt and stir these into the mixture. When the liquid is boiling turn down the heat so its just simmering, place the lid on the pan and leave it for 10-15 minutes – stirring occasionally.

 

Now turn off the head and take out the bay leaves. Using a hand blender begin to blend the soup, but be careful not to splash yourself as the mixture will be very hot! Once you have blended the mixture to the desired texture add some of the cracked black pepper. Now it’s time to take a taste. You may wish to add some more salt or some more water.

 

You can also add the crème fresh at this point. Personally I like to leave it on the table for people to add themselves!
