Supergreens Spirulina & Basil Pesto

A deep green twist on an old favorite.

 

I came across this incredible invention while at a festival in Amsterdam. Unlike the usual UK festivals which offer nothing to the health-conscious consumer, the vendors at DGTL left us spoilt for choice. Fresh food with real ingredients and bursting with flavor. My absolute favorite food vendor at this festival ‘Acai’ made incredible bagels, one of which was a chicken salad and spirulina pesto dressing…absolute treat! The day after I returned home I ran straight to the shops bought a load of basil, spinach, pine nuts and got down to making my own variation.

 

Ingredients. (Makes 1 Small Jar)

 

35g Fresh Basil Leaves

25g Fresh Spinach (Frozen is okay, but drain once defrosted)

25g Pine Nuts

1tbsp Plain Olive Oil

1tbsp Basil Infused Olive Oil

1 small clove of Garlic

Juice of ¼ - ½ Lemon

½ tsp Spirulina

Parmesan - to Taste (Optional)

 

Method.

 

Place all of the ingredients, apart from the Spirulina, into a food processor and blend until the desired texture is achieved, gently stir in the spirulina. Be careful not to add too much, the strong taste of the Spirulina can overpower the basil if too much is added. At this point you can grate in the parmesan as an optional extra
