Thai Salad Dressing

1-2 Birds eye chillies

Chunk of ginger about half the size of your thumb

2 small cloves of garlic

2tbsp fish sauce

2tbsp soy sauce

Juice of half a lime

4-5 thai basil leaves

½ tsp palm sugar

1 tsp coriander

A sprinkle of ground lemongrass

 

 

Finely chop up the birds eye chillies, garlic, Thai basil and coriander. Place these ingredients, along with the palm sugar into a pestle and mortar and grind them to a pulp.

 

Next grate or zest the ginger and add this to the mixture, along with the sprinkle of lemongrass. Pour in the fish sauce, soy sauce, lime juice and coriander and stir the sauce well.

 

Now your sauce is ready to go! Great as a salad dressing, added to fish or as a sauce for stir-fries. This recipe makes quite a small amount so your might want to double up if your cooking for more than two people.
